Recipe of the Month: Instant Pot White Beans

Serves: 6 | Time: 1 hour

If you’re from Louisiana, chances are you’ve planned to cook white beans for dinner only to realize you forgot to soak them overnight. But did you know that an instant pot can take care of that step for you? This quick and flavorful white bean recipe brings classic Louisiana comfort to your table with a fraction of the time and effort. The pressure cooker locks in flavor and creates a creamy texture without hours on the stove. Serve it over brown rice for an extra boost of fiber and to help keep blood sugar levels steady. Ingredients:

  • 1 (1 pound) package great northern beans
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1/2 cup green bell pepper, diced
  • 2 stalks celery, diced
  • 8 ounces ham or seasoning meat, chopped
  • 5 cups low-sodium chicken broth
  • 1 teaspoon ground thyme
  • 1 1/2 teaspoons garlic powder
  • Salt and pepper to taste

Instructions:

  1. Rinse and sort beans. Remove any small stones or debris.
  2. Choose sauté on the instant pot and add oil. Add onion, bell pepper and celery, and sauté for 2 minutes. Add ham or meat and sauté for another 1-2 minutes.
  3. Add beans, broth, thyme and garlic powder to the pot. Stir well.
  4. Turn sauté mode off. Cover instant pot, twist to lock the lid, and turn the valve to sealing. Press the beans/chili button or use manual mode and set to 30 minutes.
  5. When the timer beeps, allow the pressure to release naturally for 20 minutes. Then turn the valve to venting.
  6. Remove lid and use a spoon or potato masher to mash beans to desired creamy consistency. Add salt and pepper to taste.
